Text Box: Step 1.  
Remove the head from the animal. On larger, deer sized, animals it works best to cut through the meat on the neck, just behind the head. Once bone is hit, the neck can either be twisted off, or sawed off using on old wood hand saw. Take care not to cut the skull.

Step 2.  
Skin head. There is no right or wrong way of doing this.

Step 3.  
Cut off as much meat as possible. Use your fingers to feel for places that have a thick layer of meat left. Most of the meat will be found around the back of the head, where the neck meets the head, the bottom of the lower jaw, and on the side of the mouth. Don’t forget to remove the tongue and throat.

Step 4.  
Now the messy stuff. The eyes need to be removed. The best way I have found to do this, is by using a fillet knife. Stick the knife into the eye socket, and using sawing motions, move the knife all the way around the inside edge of the eye socket. Once you feel you have cut loose most of the tissue, use your finger, and scoop out the eye. Be careful when doing this as the eye contains a large amount of fluid. It can easily make a mess.

Step 5.  
The brain.  Find a piece of wire or a wire coat hanger. Take one end of it and make several back and forth bends so that it looks like a set of steps. Take the end with the steps in it and insert it into the head through little hole on the back of the head. Now start stirring.  The idea here is to break up the brain so it’s less of a mass.  Once you believe you’ve got it stirred up good, bring it a garden hose.  If you have one of those spray nozzle that shoots a long stream, these work well. Insert the nozzle into the back of the head. You will likely get a little wet doing this step. Just keep spraying into the head until all the brain is pushed out. It may be necessary to repeat the stirring with the wire.
